Tempering and Chocolate Candy Making
Thursday 19 November 2009 @ 9:24 pm
You can believe creating chocolate confectioneries is an effortless undertaking. You’ll need a calibrated thermometer, a double boiler, a rubber spatula, molding trays, and chocolates. If you add heavy cream, you’ll have chocolate truffles.
Making the chocolate candies doesn’t require exceptional cooking skills. Settle the double boiler with the chocolate on slow heat, taking steps to avoid burning the chocolates by stirring frequently. If the chocolate has melted fully, pour into the molds to set. You can garnish the candy fruit in its center through enrobing. Air dry or keep in the chiller to form.
If it’s such a simple process, why a calibrated thermometer? Well, that’s actually where you start to really work at perfecting your candy.
Relatives and friends will always appreciate your homemade creations if only for your effort making them. The reason why you’ll be needing thermometers is if you intend to market your sweet treats to a paying audience. Thermometers will keep temperatures constant from start to finish while you’re working and it’s the principle behind tempering, why chocolates are attractive.
When you see white streaks on chocolate candy that means it hasn’t been tempered properly. That’s why big manufacturers temper the chocolates they release to the market: to make them more appealing. Nevertheless, the moment your chocolate starts melting, chocolate loses its temper. Distempered, chocolate becomes dull, chalky and crumblyits natural state.
Your job during tempering is to make certain that you produce as many Type V crystals as possible as it’s the one that gives chocolates its characteristic gloss, snap and fine mouthfeel. But because cocoa butter has crystals that take form at six different temperatures as well as proliferate in dark, milk and semi-sweet chocolates also at particular temperatures, tempering becomes more like manual labor for the newbie. You mind tempering temperatures because you want to eliminate Type IV crystals which develop alongside the Type Vs. Type IV has the same sharp snap and glossy sheen but melts quicker than the Type V.
There are chocolatiers who prefer to temper by hand because of the artistic satisfaction they get from it. You may want that, too. If that’s so, invest in a good thermometer because you’ll be using it often to monitor chocolate temperatures. Keep in mind that chocolates promptly react to any changes in temperatures; when that happens, they lose temper. So you’ll have to divide your time carefully between working on your candy and minding temperatures if you don’t want the tedium of repetitive tempering.
Free yourself from that kind of hassle with an investment in tempering machines, little countertop appliances that regulate the chocolate tempering cycle for you so you can improve on your chocolate candy making craft. The tempering machine microprocessor will maintain accurate temperatures while it melts and cools your chocolate and holds tempered while you work. The obvious benefit is that you get excellent quality chocolate candies all the time, best for a sustainable money-making project!

Seize the Holiday Liveliness with these Themes
Wednesday 18 November 2009 @ 10:40 pm

Celebrate the holiday season this year by spending more family time around the Christmas tree, a universal symbol of the holiday. Pass a day searching for the ideal tree with family. Then, thread the lights around it and embellish with do-it-yourself ornaments. Request friends and family over for a party themed around the Christmas tree, but be sure to fix your house for the celebration by ornamenting your home festively. Adopt our tree dressing hints and DIY craft themes to make this Christmas one that will continue in the hearts of kin and friends for a lengthy time to come.

DIY Christmas party ideas often mean all your ornamentations, particularly the family tree, will dazzle with individual touches. A attractively dressed Christmas tree is not perfect without a complementing tree skirt. Rather than buying a general Christmas tree skirt, get the family together to plan and make your own customised skirt. It’s a fun, easy project for the holidays.
If your Christmas tree is dressed traditionally, or you would like to make a timeless tree skirt to use year after year, go with a traditionalistic look. Purchase fabric with a plaid red, green and gold tartan print. This look will go with almost any tree ornamentations and is a Christmas standard. A brilliant, velvet cloth in lush colors like deep berry, forest green and sepia brown is fit for the nicest living room. These are the complete choice if you have a fancy holiday or dinner party around Christmas. Taffeta is another ritzy looking textile that will complement a traditionalistic Christmas design scheme. Taffeta’s luster is genuinely flaunted in a metallic, silver or white color cloth, and demands little ornamentation to make it pop.
Whether you prefer to keep the tree trimming within the immediate family or share the experience with extended family and friends, traditional touches are a special means to add to your Christmas tree experience. Light a log in the fireplace or find a video Yule log to play on your television to create a comfy flavor within the room. Whip up a few batches of eggnog to enjoy as you beautify the limbs of your evergreen, perhaps singing some Christmas carols together.

My Visit to a Melbourne Japanese Restaurant
Friday 7 August 2009 @ 2:24 am

Takumi is the place to visit if you are in the mood for a culinary masterpiece. This Melbourne Japanese restaurant is the best of its kind. Not only is the food top notch, but the design of the restaurant creates a relaxing and beautiful atmosphere.

Takumi is the only Melbourne Japanese restaurant that serves Wagyu beef. Wagyu is a premium grade cut of beef that is second to none. It is so tender and juicy, it can almost melt in your mouth. . The Wagyu beef burger, grilled and marinated with Sukiyaki sauce is a favorite choice among lunchtime customers. Personally, I recommend trying the Wagyu Yakiniku Lunch Set. The beef is served raw and is cooked on a tableside grill. Companioned by veggies and a complimentary glass of beer or wine. Not only does this taste flavoursome, but being able prepare it yourself is an excellent experience.

This Japanese restaurant may specialize in Wagyu beef, but that is not the only Japanese delicacy it has to offer. The bento box is also a famous lunch option among regular patrons. Takumi offers a few options on the main entree for the bento box. A popular Japanese restaurant menu item is Gyoza. These pan fried dumplings are super good and addictive. I promise you cannot eat just one. If you are a seafood fan, try the Unagi Bento Box. Unagi is smoked grilled eel and is a very popular and delicious Japanese restaurant dish.

The decoration of the restaurant provides a very zen-like feeling. It is relaxing and inviting which makes you feel like you are right at home. The sleek tan chairs and subtle ornaments have a tranquilizing affect and allows you to feel like you are having a quiet meal at home, even though you are in the presence with other people.

Overall, Takumi is a marvelous Japanese restaurant. From their delicious menu offerings, to the many different Sake choices, this Melbourne Japanese restaurant is number one on my book.

Organic Beef
Sunday 4 January 2009 @ 10:52 pm

The recent information being made available to the public about meat is horrifying. People are slowly coming to the realization that if they eat meat, particularly beef, they must start buying it organically. Organic beef is not pumped full of scary hormones or weight additives, color or taste enhancers like stock beef. Also, beef that is raised organically can be traced back to exactly one place and one farm. Stock beef is impossible to trace because it is often shipped from a farm to a slaughterhouse where it all gets mixed together.

The life of stock beef will not bring a fresh product to your table. Organic beef is raised and harvested in the same area and is brought to your local co-op quickly so it is the freshest product possible. Also, it does not contain dangerous hormones that have negative effects on people.

Organic beef is also meant to be a sustaining factor in a community so you know that the farm where the cows graze is not over-stocked and becoming a problem to the environment around them. They are raised naturally so that they have the freshest, purest taste possible when you bring it to your table. Sure, organic beef might be a little more expensive, but think about what you are paying a little more for; a peace of mind, a safer environment and safer food for you and your family to enjoy together without the risks associated with buying, cooking and consuming stock beef. Organic beef is the future.
